avocado hummus


This recipe is lovable for a couple different reasons–for starters, it’s so absurdly easy to whip up, and it’s even more delicious than it looks. Nothing I love more than something delicious, easy and healthy to boot! A real triple threat.  


  • 1 can of chickpeas, drained and rinsed 

  • 1/2 ripe avocado 

  • 2 tablespoons tahini 

  • 2-3 tablespoons of lemon juice 

  • 2-3 tablespoons of EVOO  

  • *2-3 tablespoons Sweet Viking™ Relish 

  • *2-3 tablespoons water (as needed) ‘

  • Carrots, pita chips, whatever you want  to use as your scooper. 

Put everything (but the relish and water) in a blender or food processor and blend well–you may need to stop periodically and use a spatula to move the mixture around so it blends more easily, and you can always add a little bit of water to make sure you get the desired consistency, 

Top with Sweet Viking™ Relish and serve with whatever sounds good to you, we went with carrots to promote the illusion that sometimes we eat healthy things as well, but I was thinking about pita chips the whole time.
