Banana BreadTHIS BANANA BREAD IS SO GOOD IT'S BANANAS
I’m sorry–you should know by now if there is an opportunity for me to make a truly atrocious pun I will absolutely take it. It’s just who I am, and although I make terrible jokes sometimes–I make a darn good spicy banana bread. I used the Pepper Blend Relish, but you could sub in any of the products to this recipe and to any recipe I post on the blog :).
But seriously y’all, this bread is the perfect balance of sweet and spicy, and melt in your mouthy–so without further ado…
10 min prep — preheat oven to 350
- 3 very ripe bananas
- 1 egg
- 1.5 cups flour
- 1.5 tsp baking powder
- 1/4 tsp baking soda
- 1/4 cup softened butter
- 1 tbsp cinnamon
- 3/4 cup sugar
- 3-4 tbsp Sweet Viking™ Relish
Smash up your bananas until they are nice and smooshy (yes we use very technical terminology here at Sweet Viking)
Add the egg, softened butter and Sweet Viking Relish (or whatever you want to use) and combine with the previously smooshed bananas.
In a separate bowl, combine the flour, baking powder, baking soda, cinnamon and sugar. When that is fully mixed, add the banana mixture to this dry mixture, and mix all ingredients until its nice and smooth.
Bake for about 45 minutes at 350 degrees–I’m baking at a higher elevation so it always takes a little bit longer up here. My general rule is just to check using a toothpick or knife to see if it’s done, so you may have to leave it in for 5-10 more minutes depending where you are. If you want to do muffins, it’ll probably take around 13-15 minutes time–but I can’t say for sure because I only did the loaf style. If you find out for sure feel free to shoot me an email 🙂
