beans and rice

So Nice, So Nice.


If there were ever a dish, let alone a side dish, that inspired me to write poetry about it, this would be it. I literally stood in my kitchen and ate so much of it I was worried I wouldn’t have any left to photograph.  


“Holy mother of carbs,”  

*takes another bite*  

“But…but it was so easy to make,” 

*shovels more into my face* 

“I’m in love.” 

Calling it a side dish feels wrong, because I’ll give these rice and beans my whole heart and make it my main dish ANY DAY AND EVERY DAY. Find out for yourselves, I double-dog-dare you.  


  • 1 cup cooked rice (Jasmine used in photo)

  • 1 cup black beans

  • 1-2 tablespoons Sweet Viking™ Relish

  • 1/4 cup fresh squeezed orange juice

1. Dump everything in a bowl (or in the pot you made your rice in, if you didn’t microwave–this is a judgment free zone.)

2. Mix, mix, mix.

3. Eat.
