Chicken Valhalla


So I’m not going to lie–this recipe started as a “let’s see what happens,” and it ended up being one of the most glorious chicken dishes to ever grace my kitchen. 

Glorious because it’s delicious–it’s also easy to throw together and incredibly versatile. It could be a stew, served alone or over rice/noodles. 

Melt some cheese on it and it’s a dip. 

It can be whatever you want it to be, which I love–because let’s face it leftovers can get boring so it’s nice to have something that’s transformative. 


  • 3-4 chicken breasts

  • 1 8 oz block of cream cheese

  • 1 can cream of celery

  • 1 can black beans

  • 1 can corn 

  • ½ cup Sweet Viking Relish 

Take all of the things and dump them into a crock pot or instant pot. 

[I like to wash my corn and black beans before dumping them in]

Instant Pot: 2 hours

Crockpot: 4-5 hours on high; 6-8 on low

Pull the chicken out at least 30 minutes before serving and shred with forks. 

That is it. It’s so wonderfully, deliciously simple. For this shoot, it was devoured as a dip with some tasty tortilla chips.
