"mini-calzone-pizza-rolls"

or whatever you want to call them...they're delish!

This is really more of a concept than an actual recipe–I’m going to break down the process and then show the ingredients I used in each of the “calzones” I made. I will continue to put “calzone/pizza” in quotation marks because I would like to remain on good terms with Italy, and this is a very, very inauthentic “calzone/pizza” recipe. 

Essentially, we’re going to make big “pizza” rolls, or mini “calzones” (however you want to look at it) in a muffin tin. It’s easy, it’s fun–you can make a bunch of different flavors and play “pizza” roll roulette which sounds like a great time, no? Let’s get started.

Prep Time: 5-10 minutes | Cook Time: 15-18 minutes

Ingredients/Tools 

  • Muffin Tin
  • Pre-made pizza dough
  • Toppings of choice
  • Oil to grease muffin tin

DIRECTIONS: 

  1. Grease muffin tin and preheat oven to 425 degrees.
  2. Unroll your pizza dough and use a cup, or anything round, to cut out rounds of pizza dough slightly bigger than the muffin holes (I know that’s not the technical term, but I don’t know what it is, so that’s what we’ll be calling it.)

3. You’ll want two dough rounds for each ‘zone you’re making. Slightly stretch out one round and line the inside of the muffin hole–slightly press on the outsides to the top of the muffin rim to anchor it–don’t worry if the dough doesn’t fully touch the bottom–pizza dough is stretchy 🙂

4. Put the fillings in (here’s the fillings I used for example):

“Pizza Calzone”

~1 tablespoon marinara

~2 tablespoons mozzarella cheese

~1-2 teaspoons Sweet Viking™ Relish

Butternut-Goat Cheese

~2 tablespoons roasted butternut squash

~1 tablespoon goat cheese

~1-2 teaspoons Sweet Viking™ Relish

4. Place the second round on top and press edges in together like a mini pizza crust.

5. Make as many little mini “calzones” as your heart desires–as you’ll soon see they are super fun and incredibly easy to make. When you’re ready–put them in the oven for 15-18 minutes. At high elevation, it took 18 minutes to get to a nice golden brown.
