slaw that slaysA BEAUTIFUL SALAD.
I mean, come on y’all. Give a viking some credit–that salad right there has to at least land in the top ten most beautiful salads you’ve ever laid your eyes on. Don’t even try to deny it, we won’t hear it.
Facts: just as good for you as it is easy on the eyes. Full of nutrients that are great for your eyes, skin, muscles and digestion–this colorful slaw is a win all around.

1 cup purple cabbage chopped
1 cup carrots, shredded or ribboned
1 red pepper, thinly sliced
1 cup mayonnaise
2 tablespoons dijon mustard
2 tablespoons apple cider vinegar
2 tablespoons white sugar
1 tablespoon celery seed
2-3 tablespoons Sweet Viking™ Relish
1) Chop up all the vegetables–I used a vegetable peeler to make the ribbons of carrots, a mandolin* to do the red pepper strips and a good old fashioned knife to slice and dice the purple cabbage.
2) In a big bowl, mix up the mayo, mustard, vinegar, sugar, celery seed and relish.
3) In the big bowl with the dressing, throw in all the sliced up vegetables and mix it all together.
3.5) Mix it, mix it real good.
4) Serve with BBQ, on fish tacos, as a stand-alone dish. Whatever your little heart desires. Found a great use for it? Comment it below and we may feature it :).
